Kerala Aviyal
Aviyal is highly nutritious when mixed with varieties of fresh vegetables. It goes very well with rice and ghee. It's kerala's most favourite traditional side dish. I choosed any six vegetables from the fridge to prepare it.
Ingredients:
Green Plantain - 1
Frozen Cut Yams or fresh- 1 cup
Carrot - 1 big
Green Beans/Long String beans-1/2 cup
Zucchini(Instead of cucumber)-1/2 cup if needed
Capsicum - 1
Potato -1
Drumsticks -2
Green Chillies - 4
Indian Brinjal -1
Raw Mango -1 slice (optional)
Turmeric Powder - 1/2 tsp
Salt - as needed
For Grinding:-
Grated Coconut - 1 cup
Cumin Seeds - 1 tsp
Chopped Gralic - 2 pods
Pearl Onions(Kunjulli)- 3
Curry Leaves -1/2 sprig
Green Chilly - 4
Rice - 1 tbsp
For Garnishing:-
Curd - 2 tbsp(Optional)
Coconut Oil- 1 tbsp
Curry Leaves -1/2 sprig
Method:
Cut all the veggies into 1 inch cube or lengthwise. I pressure cook all the vegetables with 1/2 cup of water, turmeric and salt in just one whistle.
Grind all the above ingredients and added it into the vegetables and mix well and cook for few minutes. Switch off the gas.
Add curd and garnish it with curry leave and coconut oil. Close the lid to get good aroma mix well into the curry.
Serve it with rice and ghee.
