Vegetable(Onion or Brinjal or Plantain or Potato) Bajji
It's quiet good snack for winter. I enjoyed it with a cup of tea.
Ingredients:
Gram flour – 2-1/2 cups
Rice flour – 1 cup
Salt – 1 teaspoon
Red chilli powder – 3/4 teaspoon
Cumin and Ajwain seeds - 1/2 tsp each
Baking soda - 2 pinch
Any one Vegetable – Brinjal/Onion/Plaintain/Potato
Oil – 2 cups, for deep frying
Salt to taste
Water to make thick like pancake batter.
Method: Sieve or mix gram flour, rice flour, salt, red chilli powder, cumin, ajwain and baking soda with water to make thick batter. Slice any one vegetable into thin slices long as you desire. Dip them in the batter and they must coat well evenly. When the oil is very hot enough and deep fry few of them by turning on both sides till golden brown. Drain them well on absorbent paper towels.
Serve hot with Coriander chutney or Maggi Tomato-garlic sauce.
